Tapenade is essentially a thick olive paste. It can be made with additions that include capers, anchovies, lemon, and even chunks of tuna. Fratelli Carli's Pâté di Olive is simply made with carefully ripened olives and extra virgin olive oil that are puréed until smooth, leaving it with the clean, pure, fruity flavor of olives. Tapenade is used as a condiment and can be served with vegetables, fish, or meat. It is also delicious spread on a hunk of crusty Italian bread!
